ZAGAT — Bruce Kalman, The New Dog Haus Guru — by Lesley Balla
A few weeks ago we stumbled upon Bruce Kalman's Prime Pickles stand at Artisanal LA, and the former Churchill chef mentioned that Dog Haus will start using some of his products on their messy hot dogs at all three locations. But that's not the only reason we think Kalman is powering through the culinary scene right now: not only did he have a win on Ilan Hall's Knife Fight last night, he's now the new culinary director for Dog Haus as it plans to expand in 2014. His influence will be seen on the menus, which will showcase his pickles, Adam Gertler's sausages and new flavor combinations like The Big Ragu, a crispy chicken Italian sausage stuffed with fontina cheese and topped with bacon-laced tomato sauce, mozzarella and Parmesan cheeses, and Kalman's giardiniere. You can also find the One Night in Bangkok, a spicy Thai currywurst sausage smothered in cucumber kimchi relish, cilantro aioli and salty candied peanuts, among others at all three locations in Pasadena and Alhambra beginning November 20.
As far as expansion goes for Dog Haus, there are 36 sold franchise locations in the works around Southern California (LA, Orange, Riverside counties) and Utah, with the first set to open during the first quarter of 2014.
